Spicy and Sweet Dosas!

Dosas are eaten with the right hand, and at first I found it hard to tear the pancake with one hand, but I've gotten much better.

How is the food prepared?:

The dosa batter is made by blending lentils and rice into a fermented batter. The batter is then placed on to a thin pan, resembling a type of pancake. Sometimes it is flipped, but other times, one side is left purposely lighter, and the pancake is not flipped over.

Is this food connected to the local environment? How?:

The dosa originated in South India in the first century AD in a place called Udupi, but it soon became popular all over India. Throughout India you can find breakfast places that serve many types of dosas, and folks gather together to enjoy dosas with sambar (a soup with tomato and spicy flavor) and coconut chutney. Dosas are a source of pride for many South Indians, and if you try a good dosa, you can see why! There are also many family businesses in which the whole family takes part in making and serving the dosas. Dosas, like most food, bring people together, friends, family and strangers alike. Would you like to try a dosa?
