It had to be the Tanjine I made with my classmates! Tanjine is named after the cool clay pot used to cook it. The tagine pot has a cone-like lid that helps to circulate steam, keeping the dish moist and tender as it slowly cooks. The dish itself is a slow-cooked stew, often made with meat (like lamb, chicken, or beef), vegetables, dried fruits (such as apricots or raisins), and a bunch of spices!
