The great knafeh debate of Jordan

Introduction:

You won't last long in Jordan without hearing about knafeh (kuh-NAH-feh). It's a sticky, cheesy dessert that's served several ways here. People argue about its origin and the best way to eat it. Let's explore that below!

What food did I try?:

Knafeh!

How did I feel when I tried it?:

It feels strange to me to eat cheese as a dessert, but I have discovered that it's really tasty! Specifically, the syrup on top of the knafeh mixes perfectly with the melted cheese, and the pistachios on top add an earthy flavor. I would eat knafeh all day long if I could...

How is the food prepared?:

Making knafeh is pretty simple. First, you make the syrup that goes on top. To do this, you mix water and sugar, then boil them on the stove until the mixture becomes thicker. You can add rose water for extra taste.

Next, you take sheets of thin dough and cut them into small pieces. Once you mix the dough with butter, you can spread it on a big pan and cover it with cheese. Bake the knafeh in the oven for about an hour, until the top is golden brown, then immediately put the syrup on top. You're done!
