The great knafeh debate of Jordan

Is this food connected to the local environment? How?:

Jordanians love knafeh, and they eat two types of it. The first type is khishneh (HISH-nay), which has little stringy hairs of dough sticking out on top. The second type is naimeh (NAH-ee-meh), which is smooth on top. There is a BIG debate on which kind is better. It's like comparing sports teams in Jordan--people get really passionate defending their knafeh!

Most Jordanians have told me the best place to get knafeh is Habibah Sweets in the center of Amman. There is always a long line in front. People also disagree about where knafeh came from. Most people think it came from Nablus, a city in the West Bank. Others believe it came from Egypt.

No one is completely sure, but one thing is certain: everyone loves knafeh!
