He probado muchas comidas diferentes. En cada región del país hay platos típicos diferentes. También en todo el país la gente nunca desperdicia la comida. He probado todas partes de la vaca, incluyendo el mondongo, la pajarilla, el corazón, los pulmones, los riñones, y las patas. Del marrano he comido las pezuñas con frijoles y la piel en forma de chicharrón. Yo he comido mil sopas diferentes: para desayunar, almorzar y cenar. Una sopa favorita mía es la changua la cual es una sopa de leche con cebolla picada, pan duro, huevo y cilantro. La changua tiene muchas versiones y, donde vivo-en el departamento de Boyacà- existe la cazuela Boyacense, la cual es una changua que también lleva mucho queso y en vez del pan, la almojábana, un amasijo de mi region.
I have tried many different foods. In every region of the country, there are different typical dishes. Additionally, people never waste any food anywhere in the country. I have tried all parts of a cow, including its tripe, spleen, heart, lungs, kidneys and feet. Of pigs, I have eaten their hooves with beans and their skin as chicharrón. I have tried a thousand different soups, for breakfast, lunch and dinner. One of my favorite soups is the changua, a soup of milk with finely cut onion, chunks of stale break, eggs and cilantro. Changua has many versions, and where I live, in the department of Boyacà, there exists the cazuela Boyacense which is a changua with a lot of cheese; and instead of bread, an amasijo of my region called almojabana. There are so many different amasijos which are like different breads.
