A lot of the first settlers of Nuevo Leon were sefarditas (Jewish people who had been kicked out of Spain) or conversos (Jewish people who had recently converted to Christianity). With them, they brought the cooking method known as al pastor, where meat is slowly roasted on a stick that is rotated over a fire.
