Encebollado

Introduction:

Food in Ecuador is very tasty and diverse. We can find traditional dishes such as encebollado (fish stew). Come with me and learn more about encebollado!

What food did I try?:

As I walked around my town, I found a resturant that specialized in Ecuador's coastal cuisine, specifically a dish named encebollado. I knew I had to try it! I had the encebollado de camaron (shrimp), calamari (squid), and pescado (fish). 

How did I feel when I tried it?:

As I took my first bite, I could not help but feel comforted. The warm aroma made me feel as if I were home. The shrimp was very tender and melted in my mouth. The calamari and fish were filled with the delicious spices from the soup. The mix of different seafood helped me feel full and happy!

How is the food prepared?:

Encebollado can basically be described as oniony fish soup. Although that may not sound very appetizing, I promise you it is. This soup is made of shrimp, calamari, tuna, yuca (cassava), tomato, pickled onions, spices and cilantro. 

Is this food connected to the local environment? How?:

This soup originated on the coast where fishermen would cook it as a good source of nutrition. Since seafood is easily available in Ecuador, this dish can be found in nearly every street corner.
