Their summer seasonal produce is sold directly to restaurants in the area. This is good because it means that restaurants nearby can purchase produce (fruits and vegetables) from the local area, which is beneficial (good) for a couple of reasons: 1. Buying from local farmers supports the farmers so they can get paid and have a reliable or steady means of work and 2. The distance the produce has to travel from the farm down to local restaurants is much shorter than the alternative, which would be for the restaurants to buy their produce from around the world and ship in the produce over long distances. Shipping from other countries requires energy, usually some form of petroleum (oil or gasoline) which releases a gas (carbon dioxide or CO2). Carbon dioxide is a Greenhouse Gas. Greenhouse Gasses stay in air for a long time and hold in heat well. Over time, as we add more carbon dioxide to the air, the air heats up. This is why we are experiencing the phenomenon of climate change or "global warming". Think of the carbon dioxide gas as a blanket. Adding more and more carbon dioxide is like adding more and more blankets to the Earth - it starts to get hot!
The farm also recycles its waste. The farm feeds excess produce to its chickens and cows. In turn, the farm uses the cows' poop (called manure) as fertilizer to help them grow their plants.
