Exploring Danish Cuisine as a Vegetarian

Introduction:

I was interested in trying the BMO (buns with cheese) because it is a Danish variation on one of my favorite American foods: the grilled cheese. As a vegetarian, cheese and bread (and other carbs) make up a large part of my diet, so I was excited to introduce a Danish version of this combination into my diet. 

What food did I try?:

I tried the BMO (bolle med ost, which literally means "buns with cheese").

How did I feel when I tried it?:

I was excited to try the food because it seemed like the perfect dish for me. Something that I was not prepared for was how butter-forward the dish is. Typically, when eating butter on toast or other bread variations, the butter is melted. In this case, I was biting into a thick layer of cold butter. I'm still not convinced that this is the butter/bread variation for me, but I also acknowledge that I probably need to try it more regularly to better adapt to this new preparation.

How is the food prepared?:

Butter is spread onto the bun, and then cheese is placed on top of the bun. The cheese is typically an aged cheese with a stronger flavor. The bun is usually topped with seeds.

Is this food connected to the local environment? How?:

Often, the cheese is made in Denmark as Danes produce a significant amount of cheese.
