The first thing you need to know when discussing food in Ecuador is that it's just as diverse as the country itself! There are three regions in Ecuador: La Costa (the coast), La Sierra (the mountains), and El Oriente or La Amazonía (the Amazon). Each of these regions has its own traditional dishes and common foods. I live in La Sierra, but very close to the coast, which means my diet is primarily based on those two cuisines. Here’s a bit about the foods I’ve tried here and what makes up my diet in Ecuador!
In the almost two years I have lived in Ecuador, I’ve tried some interesting foods. Traditional foods include tortillas (different from the Mexican version we’re used to in the U.S., Ecuadorian tortillas more closely resemble Salvadoran pupusas and are filled with a cheese mixture), encebollado (a tuna stew which is one of my favorite dishes here), humitas (a type of tamale-like food made from corn), and fritada (a roasted pork dish).
