Then, you add water to your stew and bring it to boil. Afterwards, you add your rice, but be careful and make sure you continue to stir the rice so it doesn't get burnt! After the rice is cooked, you add diced green peppers and carrots into the rice and then let it all sit on low until the stew is absorbed into the rice. Now, you have a delicious pot of jollof rice ready to be served!
You can find everything you need for jollof rice at local markets from farmers in the area. The farmers in my region are primarily cocoa bean farmers but also grow many vegetables and fruits. The ingredients in jollof rice (garlic, ginger, tomatoes, onions, green peppers and carrots) are all grown by different farmers in the area. There aren't supermarkets like in the US in rural areas of Ghana, so when preparing meals, you have to find everything at the market. The market itself is an open air market similar to what a farmer's market looks like in the United States. There are many sellers with all kinds of produce for sale. The main market days for my market are Wednesday and Saturday, which are the days that local farmers will take their products to the market.
