During this trip, a women's collective opened their home and served us a five-course meal of traditional Oaxacan food. I enjoyed vegetable soup, memelas, quesadillas, mole negro, and tamales. The mole was particularly good, as it contained over 20 ingredients including chocolate, tomatillos, nuts and spices. Mole is so complex, taking multiple days to prepare the ingredients and to cook this dish. These traditional dishes are best made and sampled outside the city and are some of my most tasty memories from this trip!
