First, a dough is made from grated potatoes, flour, and an egg. The dough is then cut apart to make tiny dumplings; this can be done by hand or with a special tool that has small holes which divide the dough. These dumplings next get boiled in water and strained just like pasta. Finally, the dumplings are combined with the bryndza cheese and topped with bacon and herbs.
Bryndzové halušky is a super old dish dating back hundreds of years! Until recently, most people who lived in Slovakia were farmers. They worked long hours in their fields and used up lots of energy growing crops. Since bryndzové halušky is made up of foods with many calories like potatoes, bacon, and cheese, it was the perfect dish to keep them fueled!
