Though Taiwan has fast food and other restaurants just like we do in the United States, it has a lot more options that are often one of a kind: the night markets. When it begins to get dark, various cooks and businesses will wheel out small mobile carts and sell a wide range of food. From chicken feet and fresh squid to blood sausage and durian juice, they'll have it all!
There are so many options at the night markets that it can be hard to make a decision! Luckily, some of my friends who are Taiwanese locals are always willing to steer me the right direction. One food that is unique to Taiwan is 臭豆腐 (stinky tofu). You might be able to guess, but yes, it's named stinky tofu because of the funky way it smells. The smell is so strong that even from a block away, you know it's being cooked somewhere nearby! My first time trying it was a real test of my courage, since based on the pungent smell I wanted to stay pretty far away from it. The vendors know that it doesn't smell good, but they encouraged me to try it because the flavor was supposed to be worth it!
