Tuo Zaafi

Dagbani is the spoken language in the area I am living. 

How did I feel when I tried it?:

When I first tried this dish, although I didn't immediately love the taste, I felt like I was truly a part of the community. Just like all things you try for the first time, I was a little nervous because I didn't know what the flavor would be like. However, seeing how everyone was really enjoying the meal, and how it brought everyone together, I was excited to take part. When I first tried the TZ, I was with a family in my community. I was unfamiliar with eating from the same bowl as 5 other people but it truly made me feel so connected with everyone and like I was a part of the family. Now, I eat TZ with my community nearly every night and I have started to really enjoy the taste, but I still think my favorite part about the meal is how it brings everyone together.

How is the food prepared?:

Tuo Zaafi is prepared by first boiling corn flour and water, once it reaches a thick consistency, remove half and set aside. In the pot with the cornflour, add cassava flour and stir strongly with a wooden paddle. When the mixture thickens, add back in the cornflour and water mixture that was previously set aside. Keep stirring vigorously until you reach your desired consistency. The mixture should be thick but not too sticky. It is then removed and put into bowls. Any type of soup or sauce can be enjoyed with TZ, the most common is okra soup. 

Is this food connected to the local environment? How?:

This food is not only a symbol of community because of how it is shared, but also because its ingredients are all sourced from local farms.
