Raclette Will Get Me Through This Winter

In Provence, you can expect to see some fresh olives (one of their main exports) or even cheese made with herbes de provence (a mix of spices specific to the region). You'll also see that I have included some pictures of dishes specific to winter in Provence. I was lucky enough to spend a Christmas in Viens where I got to see some of the traditions practiced only in this region of France. For example, it is customary to put out 13 desserts (including candies, fruits, nuts and baked goods) for the holidays in order to represent Jesus and the 12 apostles. This display of desserts accompanies the grand meal served on Christmas day. We also had tapenade (olive paste), foie gras (bird liver paste), oysters, snails, and, of course, plenty of cheese.
