First, the meat is boiled and then cut to size for the dish. Next, the noodle dough is made from flour, water, eggs and salt. The dough is given some time to rest before being rolled and cut into long, thin strips. Finally, bright vegetables are cooked and cut to size for the dish.

Is this food connected to the local environment? How?:

Yes! Kyrgyzstan and Kazakhstan both have a nomadic history, meaning that people did not live in just one place. Instead of living in cities like Waterford or Almaty, people here used to move from place to place seasonally. Since there are a lot of horses in the region and because horses can carry people and things for a long distance, horse meat became pretty commonplace. Today, it can be found in beshbarmak, but also in many other dishes in the region!
