Ghanaian dishes are delicious and flavorful. Most meals in Ghana are starch heavy, with some common starches being banku, fufu, cassava (a root vegatable), yams, rice and plantains (large bananas). All of these crops are grown in the country on local farms. Meals are also served with meat and other proteins such as chicken, fish, goat and eggs.
Today I tried a dish named "red red". This is a bean dish made from black-eyed beans with a tomato base and served with a side of fried plantains. Sometimes people also add a side of veggies to the dish. I’ve seen people eat it with a side of avocados and gari, which is a flour made from cassava root.
I love fried plantains, so I already knew I was going to love this dish. It is a bit too oily for my liking, so, as I was eating, I was feeling is bit heavy with all the fried items I was consuming. Overall, it's a good dish, and I would recommend it!
First, you soak the beans till they soften up and then bring the beans to boil. In a separate pot, you add some oil and cook onions, peppers and fresh tomatoes. Feel free to add some tomato paste, too, if you want. Next, add your preferred seasonings and let it all simmer.
