Making Tortillas in Michoacán

Another famous Mexican dish is mole (pronounced mole-ay). Mole is a flavorful meat stew, and there are many different varieties. You might be surprised to know that some mole sauces have chocolate in them! Dark chocolate is blended with lots of other ingredients like spicy chiles, onion, garlic, tomato, and more. This creates a very rich, flavorful sauce to cook chicken or pork in. The mole is served steaming hot - of course with lots of hot tortillas to dip in the sauce!

How did I feel when I tried it?:

I love eating fresh homemade tortillas! I was used to eating store-bought tortillas from the supermarket, but they are not nearly as tasty as fresh tortillas. The corn tortillas I had tasted from U.S. supermarkets were dry and not very flavorful. The corn tortillas I have eaten here in Mexico are much softer and more flavorful.

How is the food prepared?:

Tortillas come in many shapes, sizes, and even colors! They are typically made with corn or wheat flour. In my experience, corn tortillas are more common than flour tortillas. Generally speaking, flour tortillas are more common in northern Mexico, while corn tortillas are common in the central and southern parts of the country.

Most wheat flour tortillas are white, and most corn flour tortillas are yellow. I say "most" because there are some corn tortillas made from blue and purple corn! I just ate blue corn tortillas at a restaurant last week. They were blue-ish gray in color but tasted exactly like regular corn tortillas. If I ate them with my eyes closed, I would not guess they were a different color!
