






These are some of the biggest freshwater fish on earth, and if you go to the Tennessee aquarium, you can see some of them in their Amazon exhibit! Both of them were incredible, and symbolize perfectly the way ceviche can be endlessly modified and changed, and how local communities can tie it to their own local environments. I grew up in the U.K., where fish and chips is one of our most famous dishes. However, we are not blessed with Peru’s geographic diversity, and our variety of fish is far lower. We try to adapt and follow Peru’s example; when cod is overfished, people sell haddock instead, and some fish and chip shops sell other less well-known fish like skate (a kind of small stingray). However, ceviche has taught me just how much a dish can be modified and adapted to different places and environments and remain delicious every time!
