They start by making a custard base that is used for many of the flavors. This base is similar to ice cream, however, it has a higher proportion of milk and a lower proportion of cream and eggs, sometimes no eggs at all. After that, depending on the flavor, additional ingredients will be added. Then, this base gets churned in a mix at a slower rate than ice cream. This makes sure that there is less air being incorporated, resulting in a denser and thicker texture.

For example, the seasonal flavors offered at Gelateria Fassi are often based on which ingredients are in season and are the freshest. This will most often include fruit-flavored gelatos or sorbets, such as lemon, mango, banana, strawberry, melon, fig, etc.
