I’ve tasted many cuisines in my life, but Mongolian food is unlike anything I’ve ever had. The unique nature of Mongolian cuisine is a product of both the Mongolian environment and Mongolia’s historically nomadic lifestyle.
Drawing from a proud nomadic tradition, the Mongolian diet consists largely of dairy products and meats. This culinary tradition extends for centuries and can be traced back all the way to the medieval era (do you know what that means?), to the times of Genghis Khan (do you know who that is?).
Much of what Mongolians consume come from animals like sheep, goats, horses, and cows. For thousands of years, the nomadic way of life has depended upon livestock, and that remains true for hundreds of thousands of Mongolians today. Also, because nomads and their animals were always on the move, they could not stay in one place for long, This meant that the Mongols historically did not consume many agricultural products like vegetables or rice.
The harsh climate of Mongolia also demanded the nomads to consume a diet that can help them survive in winters as cold as -40 °C (what is that in Fahrenheit?). This is why Mongolians not only eat lots of meat, but also eat lots of fatty meat.
