Buen Provecho! The Wonderful World of Ecuadorian Cuisine

It should not be a surprise to see that most of the traditional dishes are made from the local produce. The juices are all made from the wonderfully diverse fruit options here. I will miss the jugos (juices) when I go home. Encebollado is made from tuna that they fish for along the coast. It is one of Ecuador’s big  exports. Plantains are another big export that work their way into breakfast, lunch, and dinner. Chocolate from cocoa grown in Ecuador is world famous, along with their coffee. Agricultural production is a big business in Ecuador, and eating is a big part of the culture. So when you go to lunch today, tell your friends, buen provecho!
