How is the food prepared?:
- To prepare dog (na'an asu), you marinate the meat in different spices and vegetables like garlic, onions, salt, pepper, chili, tamarind, lemon zest and tumeric for a couple of hours. Next, you put the meat in a pot over a wood-fire for half an hour. Then you are ready to try the most delicious exotic dish here in Timor!
Is this food connected to the local environment? How?: I wouldn't necessarily say that the food is connected to the local environment, but it is a traditional dish for major events.
