Crema de Ayote

Once the ayote mixture was soft enough, we drained the saucepan and blended the ingredients with equal amounts of crema dulce. You can season this dish to your liking, and add additional seasonings such as bayleaf, rosemary, or oregano! And voila, you have made Crema de Ayote!

Known as a superfood in Costa Rica, ayote is a common and popular ingredient due to its historical connection with the previous indigenous groups in Latin America. In addition to its label of being a food with multiple nutritional value, ayote is a dish that Costa Ricans usually serve during the winter season or, in Costa Rica’s case, the “dry season” (as Costa Rica only has two main seasons and not four!).
