Popular and cultural foods are definitely connected to the local environment. For example, nearly all South Koreans have kimchi as a side dish. Kimchi is spicy, fermented lettuce. After doing some research behind the history of how kimchi came to be, I discovered that kimchi was made as an option other than meat. During the Joseon Dynasty, South Koreans adopted Confucianism and people started to practice and create their own food. Kimchi has become such a main part of their culture that many Korean households have a refrigerator designated to just storing kimchi
