Larb: My New Favorite Thai Dish

When your food doesn’t travel far from the farm to the fork, the people transporting the food do not need to use as much gasoline to get to you, making it both cheaper to purchase and better for the environment. Because the rice in Khon Kaen only travels a short distance, it is cheap to buy and found in nearly every meal, which means I get to enjoy it every time I eat larb.
