Tortillas, Tortillas, and More Tortillas

I also felt proud of myself for deciding to try something I had refused to eat before. I knew my mom would be happy when I told her I tried chilaquiles. As I was eating them, I was surprised by how much I liked them!

How is the food prepared?:

Chilaquiles are made of fried tortilla strips that are topped with a spicy salsa (red or green salsa) and cheese. Typically, the sauce is made seperately and then poured over the crispy tortilla chips until the tortilla starts softening. They can also be topped with different meats. I ordered the chicken chilaquiles in salsa verde, green salsa. They are topped with cheese, sour cream, and sometimes beans and avocado. It is a very popular breakfast dish!

Is this food connected to the local environment? How?:

Chilaquiles are an example of the popularity of toritllas and the wide variety of dishes that can be made with them. Tortillas are made from corn, which is one of the main crops grown in Mexico. The abundance of corn makes tortillas an accesible food item. That is why so many dishes are made with tortillas!
