Tacos Everywhere

How is the food prepared?:

Chiles en nogada is traditionally a stuffed pepper with ground meat, sauce and three toppings: pomegranate, cream sauce and parsley, which reflect the red, white and green of the Mexican flag. The taco that I tried had all of the ingredients, but instead of it being a stuffed pepper, the pepper was also cut up and put on a tortilla. 

Is this food connected to the local environment? How?:

This food has become an important staple for Mexico's Independence Day. This is because the colors reflect the flag, but also because the pomegranate is only ripe for one to two months around that day in September.
