Since most noodles are mainly made out of wheat flour, northern Chinese cuisine features noodles much more than southern Chinese cuisine. However, I live in southern China. So why am I eating so many noodles? The answer is simple. Many people from northern China have come to Shanghai to open restaurants, and they serve the food they love from home.
