The Canarian Islands are home to a very delicious cuisine. A signature dish of the Canarian cuisine that is common in Canarian households, and also a tourist favorite, are papas arrugadas con mojo (wrinkly potatoes with salsa).
The first time I tried papas arrugadas con mojo was in La Laguna during a religious event that took place in a town square. Papas arrugadas are most commonly served with mojo rojo (red sauce) but there are two mojos (sauces) offered. Mojo rojo is a bit spicier, as it is a mixture with garlic and chili pepper. The other, mojo verde or mojo de cilantro is less thick in consistency and less spicy. Both sauces have nearly the same ingredients except mojo de cilantro has green pepper, rather than red, as well as cilantro or parsley.
I was very excited to try the famous papas arrugadas con mojo. I noticed that the potatoes are much smaller than they are in the U.S. After taking my first bite, I also realized how salty the potatoes were, and I was craving more. I added each sauce to every bite to see how well each paired and both are incredible. However, my favorite is mojo rojo!
